Baking with Evie: Blueberry Muffins with Cinnamon Sugar Tops

And while my besties Piper and Lottie would swear my banana bread is the thing to beat (don't worry, that recipe’s coming later), today we’re baking something that tastes like sunshine in muffin form—Blueberry Muffins with Cinnamon Sugar Tops.

These are the kind of muffins you bake on a Saturday morning when your kitchen smells like comfort and you’re still in your slippers. Bursting with blueberries and topped with a crunchy cinnamon sugar lid, they’re perfect for breakfast, book club, or bribing your favorite barista.

🧁 The Recipe

Ingredients:

  • 1 ½ cups all-purpose flour

  • ¾ cup granulated sugar

  • ½ tsp salt

  • 2 tsp baking powder

  • ⅓ cup neutral oil (like canola or vegetable)

  • 1 egg

  • ⅓–½ cup milk

  • 1 ½ tsp vanilla extract

  • 1 heaping cup fresh or frozen blueberries

Topping:

  • 2 tbsp sugar

  • ½ tsp cinnamon

  • Pinch of salt

  • Optional: coarse sugar for extra crunch

👩‍🍳 Directions:

  1. Preheat your oven to 400°F and line a muffin tin with paper liners (or grease well).

  2. In a large bowl, mix the flour, sugar, salt, and baking powder.

  3. In a separate bowl, whisk together the oil, egg, vanilla, and ⅓ cup milk. Stir into the dry ingredients until just combined—don’t overmix or your muffins will revolt.

  4. Fold in the blueberries gently. If the batter feels too thick, add a splash more milk.

  5. Divide evenly into muffin cups and sprinkle each one generously with the cinnamon sugar topping.

  6. Bake for 18–20 minutes or until golden and a toothpick comes out mostly clean (a little blueberry goo is forgivable).

Let cool just enough so you don’t burn your tongue, then dive in.
