These appear in the Christmas book as the thing customers attempt to bribe Piper for, which was funny to write and then became a problem, because people asked for the recipe and I did not have one. I do now. The bribery was, in hindsight, reasonable.

You'll Need

What To Do

  1. Whisk the oil and brown sugar, then beat in the eggs one at a time and the vanilla. It will look thin. Hold your nerve.
  2. Stir in cocoa, flour, baking powder and salt. Chill at least 45 minutes — this dough is unworkable warm and there is no shortcut.
  3. Roll into balls, then roll each first in granulated sugar and then in powdered. Two coats. The granulated layer stops the powdered one dissolving, which is why other people's crinkles come out gray.
  4. Bake at 350°F for 9–11 minutes. They will look underdone in the middle. They are supposed to. Take them out.

The double sugar roll is the entire trick and almost nobody does it. That's the difference between a crinkle and a chocolate cookie that has been through something.
